Banana and Coconut Bread
- 2 cups self-raising flour
- ½ tsp salt
- ½ cup shredded coconut
- 1 tsp ground cinnamon
- ½ cup raw sugar plus a bit to sprinkle
- 2 ripe bananas mashed
- 2 eggs beaten
- ½ cup coconut cream
- 80g butter melted.
Mash bananas, combine with sugar and butter then eggs and coconut cream.
Fold in the flour, salt, grated coconut and cinnamon
Grease a loaf tin – put in the mixture, sprinkle about two teaspoons sugar on top
180C for 30-35 minutes until a skewer comes out clean
