Artichoke Bubble & Squeak

The favourite leftover dish just got sophisticated.  This is really simple and really good.

  • 2 cups mashed potato
  • 1/2 can artichoke hearts
  • 2 eggs
  • A Tbsp. olive oil or butter

Mix the potato, eggs and artichokes well

Fry in the oil until cooked.


A few few drops of truffle oil would be really good on this.
