Sweetcorn and Bacon Chilli Muffins


  • 1 can creamed corn
  • 1 onion finely chopped
  •  1 1/2 cups self raising flour
  •  1 tsp baking soda
  • 1 tsp chilli sambal
  •  1/2 cup grated cheese
  • 1Tbsp olive oil
  • 1/2 cup fried bacon pieces
  • 2 eggs, beaten
  • 1/2 cup milk
  1. Preheat the oven to 180 C
  2. Grease a muffin pan
  3. Mix all the ingredients and place mixture in the muffin pan
  4. Bake 15 minutes or until a skewer comes out clean

Serve with cream cheese.  


These were baked a little too long but were still terrific.
