Slow-Cooked Sweet Sour Bitter Lemon Chicken

  • 4 boneless chicken thighs, halved
  • 1 large onion, slivered
  • 1/2 each red and green capsicum, sliced
  • Plenty of Garlic, chopped or crushed
  • 1/2 cup brown sugar
  • 1/4 cup cider vinegar
  • 2 Tbsp lemon juice
  • 1/2 cup water
  • 2 Tbsp Bickfords Bitter Lemon Cordial Concentrate
  • 1 Tbsp soy sauce
  • A dash of Worcestershire sauce
  • 2 tsp chicken stock powder
  • 2 tsp tomato paste
  • A few grinds of black pepper
  • Salt to taste
  • 2 Tbsp cornflour mixed in water
  • Oil for browning the chicken
  1.  Brown chicken in a frypan, then add to the slow cooker with the remaining ingredients except the cornflour mixture
  2. Cook on low for 6-8 hours
  3. Strain the sauce into a saucepan, keep the chicken and vegetables warm
  4. Stir the cornflour mixture into the sauce and bring to the boil
  5. Simmer until thickened, add salt if necessary and return the sauce to the chicken and vegetables

Serve with steamed rice or noodles
