Bacon and Egg Potato Salad

  • 4  potatoes
  • 6 hard-boiled eggs, shelled and cooled
  • 200 g bacon pieces
  • chopped parsley,
  • chopped red and green capsicum
  • a few dashes of Angostura Bitters
  • a few grinds of pepper
  • 1/2 tsp smoked paprika
  • a squirt of Dijonaise or a half teaspoon of your choice of mustard
  • your favourite mayonnaise – mine is “Best” brand.
  1. cut the potatoes into large bite size pieces and bring to the boil in salted water
  2. simmer about 8 minutes until cooked but still al dente
  3. rinse with cold water, drain and leave to dry off and cool
  4. fry the bacon pieces, drain out excess fat and leave to cool
  5. chop the eggs
  6. mix it all together gently and chill in the refrigerator.
