Spiced Lime and Mango Chutney

I bought some frozen mango pieces to use in this recipe.  Fresh fruit are too good to use in chutney at local prices.  As I had no lime to zest, I experimented by adding lime marmalade.  Then I threw in some lime cordial for good measure.  An experiment that worked.   

  • 1 cup raw sugar
  • 1 cup white vinegar
  • 6 cups mango pieces
  • 2 onions, chopped finely
  • 1 cup raisins
  • A thumb of ginger, grated
  • 1/2 cup lime marmalade
  • 4 Tbsp lime juice
  • 2 Tbsp lime cordial
  • 1Tbsp crushed garlic
  • 2 tsp yellow mustard seed
  • 1/4 tsp allspice
  • 3 or 4 fresh chillies seeded and slivered
  1. Chop the raisins 
  2. Bring the vinegar and raisins to the boil and add the sugar, stirring to dissolve.
  3. Add mango, onions, lime marmalade, cordial and juice, garlic, ginger, spice, mustard seeds and chilli
  4. Return to boiling and turn down low
  5. Simmer, stirring occasionally, about 40 minutes or so until the chutney thickens
  6. Bottle and cool.
