Best Breakfast Pancakes

These are about the best pancakes I have ever made. image Ingredients

  1. 1 cup self raising flour
  2. 1 cup milk
  3. a heaped tablespoon of butter, melted
  4. a few drops of vanilla essence
  5. 1/4 cup sugar
  6. 1/4 tsp salt
  7. 2 eggs, separated

Method

  1. whisk the egg whites to foam
  2. Mix the milk, butter, vanilla and yolks into the flour, sugar and salt
  3. fold the egg white into the batter
  4. Cover and leave to stand for an hour or more
  5. heat a lightly greased pan or skillet to medium heat – not too hot as the pancakes have sugar in and will burn easily
  6. when the batter is bubbling and begins to set, flip the pancake to cook the other side
  7. serve warm with honey, or with fruit and cream
