An Australia Day indulgence.
Oven-baked chips with a dressing of cream cheese, cheddar, mozzarella and Parmesan, covered with gravy.
I used the dregs of a few leftover cheeses all mixed up, and a bit of instant roast beef gravy powder I had sitting around.
Surprisingly good brunch! Very satisfying comfort food.
Served with a low alcohol lager and lime.
Apologies to any Québécois who feel it is not quite genuine. It really is delicious anyway.
