Carrot and Capsicum Sambal

This is a good accompaniment to any Indonesian or Malay dish.

It is also a really good salad.

Ingredients:

  • 2 carrots, peeled & topped, finely julienned or grated
  • half a sweet capsicum seeded and sliced into fine slivers
  • 1 long red chilli seeded and sliced into fine slivers
  • 1 long green chilli seeded and sliced into fine slivers
  • 1 sweet yellow chilli seeded and sliced into fine slivers
  • 1/2 cup finely sliced shallots or spring onions
  • 3 Tblsp shredded coconut
  • 1 Tblsp finely chopped coriander leaves
  •  A few mint leaves finely chopped
  • 1 tsp lime juice
  • salt and pepper to taste
  1. Prepare and mix ingredients
  2. Serve.

 Simple really.
