Pirate Pasta Sauce

For pasta or pizza:


  • 4 Tblsp Olive oil
  • Garlic
  • 1 large onion, chopped
  • 200 ml Dark Rum
  • 1 tin chopped tomatoes or 2 cups chopped fresh tomatoes
  • 200 ml chicken or vegetable stock
  • 2 Tblsp tomato paste
  • a handful of fresh basil
  • 1 tsp dried marjoram
  • a sprig of fresh or 1/2 tsp dried rosemary
  • 2 bay leaves
  • 1 tsp salt
  • ground black pepper


  1. Sauté garlic and onions.
  2. Add rum and simmer until reduced by half.
  3. Add remaining ingredients and simmer on low for 30 minutes until sauce is thick.

    can you tell that picture is Photoshopped? My stove is a mess, and the pic looked cluttered. so I transferred the sauce digitally to my pyrex casserole.
