Savoury Meatloaf

I love this. I would rather have it in my ‘fridge than luncheon sausage.  It makes a great hot meal with mashed potato and peas, it is fantastic in toasted sandwiches  or just in a sandwich, and great cold with salad. last week I ate green curry all week.  This week will be meatloaf.

Ingredients

  • 500 g lean mince (beef, veal and pork, turkey, chicken)
  • 500 g sausage meat
  • a rasher of bacon chopped small
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 tablespoon rice flour
  • 1/2 packet French onion soup powder
  • 2 carrots grated
  • 1 large onion chopped
  • garlic
  • 1 teaspoon paprika
  • 1 teaspoon mustard powder
  • 1/2 teaspoon chilli
  • a dash or three of mushroom soy
  • a tablespoon of tomato paste
  • 2 tomatoes thinly sliced
  • A cup of sliced mushrooms
  • stalks of the mushrooms chopped
  • a teaspoon of mixed herbs
  • a few grinds of black pepper
  • 1/2 cup shredded tasty cheese
  • 1/4 cup parmesan

Method

  • Thoroughly mix all the ingredients except sliced mushrooms, tomato and cheese
  • divide the mixture into two lightly greased non-stick loaf tins
  • top with sliced tomato, then tasty cheese, then sliced mushrooms then parmesan
  • bake for 50 minutes at 180 C
  • Stand ten minutes before removing from the tin.

Can be served hot or cold.   Loves relish, chutney or sauce.
