Truffle Oil

Truffle oil.  Who would have thought that a few drops could make such a difference to a dish?

I made mashed potatoes and artichoke hearts to go with my corned beef.  I added a few drops of truffle oil, made by the Wine & Truffle Co., Manjimup.

As soon as I tasted it I recognised the flavour.  This was actually the dish I ate at the Quest in Auckland long ago,  which until now I had thought was a variation of skorthalia, and which I have been trying to reproduce ever since.  Got it at last!
