Seafood Salad

Ingredients:

Any or all of –

  • cooked prawns or shrimps
  • Cooked Green Lip Mussels
  • Surimi
  • Smoked Salmon
  • Smoked Oysters

amounting to about 4 – 5 cups volume.

optional additions could include cold left-over boiled potatoes, chopped, or  cooked pasta (eg penne or macaroni)

plus

  • 1/2 cup chopped spring onion
  • half a red capsicum chopped small
  • a tablespoon of chopped capers
  • two cloves garlic squeezed
  • a squeeze of lemon juice
  • a squeeze of lime juice
  • a dash of Angosturra bitters
  • 1 teaspoon smoked paprika
  • 1 tablespoon Dijon mustard
  • 5 Tablespoons “Best” brand Mayonnaise (adjust if less or more main ingredients included)
  • salt and pepper to taste
  • a few prigs chopped parsley

Mix the ingredients except the parsley and chill in the refrigerator for 1 or 2 hours to allow the flavours to blend.

Sprinkle with parsley and serve with fresh bread and crisp iceberg lettuce.
