Not really a muffin at all, but a variation on stuffed potato.
- 500ml mashed potato made with butter and a dash of milk
- 1 cup diced smoked chicken (or ham or cooked bacon)
- lots of parsley chopped
- 1 small onion chopped finely
- 2 eggs beaten
- 1/2 cup light sour cream
- 1 cup grated Swiss cheese or Gruyère
- pepper to taste
- grated Parmesan
Mix it all in a bowl except the Parmesan
Top with a sprinkle of Parmesan
Bake at 18o C for 20 mins in the middle of the oven until browned on top. Serve as a side dish or as a light lunch. Would make a great accompaniment to a BBQ.
Can be frozen and reheated in a microwave .
