Cheesy Smoked Chicken and Mashed Potato Muffins

Not really a muffin at all, but a variation on stuffed potato.


  • 500ml mashed potato made with butter and a dash of milk
  • 1 cup diced smoked chicken  (or ham or cooked bacon)
  • lots of parsley chopped
  • 1 small onion chopped finely
  • 2 eggs beaten
  • 1/2 cup light sour cream
  • 1   cup grated Swiss cheese or Gruyère
  • pepper to taste
    • grated Parmesan

Mix it all in a bowl except the Parmesan

Chopped ParsleySpray a non stick muffin tray lightly with oil and divide the mixture up in each hole (Should be good for a dozen)

Top with a sprinkle of Parmesan

Bake at 18o C for 20 mins in the middle of the oven until browned on top.  Serve as a side dish or as a light lunch.  Would make a great accompaniment to a BBQ.


Can be frozen and reheated in a microwave .
