Smoky Pizza on the Barbecue

I travelled to Perth Yesterday, to meet my friend Tim, and go to Les Miserables at the Regal in Subiaco.  More on that in my other blog.

I bought a pizza stone,  a smoke box and some gourmet hickory and mesquite wood shavings  for the barbecue.  Unfortunately they had no Titree.

So today I experimented with baking a smoked pizza on the barbie, using the smokebox.

It worked really well.  I had my doubts that the barbie would be as efficient as the oven, but it worked fine.

Pizza dough recipe:

  • 1 cup wholemeal flour
  • 3 cups strong white flour
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1  1/2 cups warm water
  • 2 teaspoons dried yeast
  • plain flour for dusting the board, rolling pin and pizza stone
  • olive oil to wipe over the proving bowl

Dissolve the sugar and yeast in 1/2 cup warm water and leave to ferment.

When it is foaming up, mix all ingredients with a doughhook and knead well until the dough is firm and springy.

Put into an oiled bowl, cover with a damp tea towel and leave in a warm place to prove and double in size.

On a floured board, knead a few times then cut the dough into three equal pieces. Transfer one onto a sheet of baking paper and roll out to a circular shape about the size of your pizza stone.

It pays to do the rest of the assembly on the baking paper unless you have a pizza shovel.  Otherwise it gets messy when you try to transfer the dough onto a hot pizza stone.  Check my photos and you will see what I mean.  I must get a pizza shovel.   Or not forget the baking paper.

While you are doing this, the pizza stone should be heating on the barbie, (or in the oven at 200C)

Brush the top of the pizza base with olive oil

Tomato sauce and herbs next,  Basil, Oregano, whatever.

chopped or thinly sliced garlic and onion if you are adding them.  Salt and pepper to taste

Next comes the grated cheese(s)  Romano, mozzarella, a mixture…

So far we have a Margarita.

More topping(s)

Mushrooms

chopped capsicum

Sliced sausage, bacon, ham

Seafood

Smoked mussels and anchovies  (as made today)

chicken

Whatever.  Put anything you like on top.  The main thing is not to overdo the cheese.

Please remember that we are making pizza here not a fancy pizza-like object = which no matter how delicious – cannot be a pizza because it is JUST IS NOT.  In other words, no pineapple. and no smoked chicken, Camembert and cranberry sauce.  Well, such ingredients are   delicious, and it will work.  It is just not a pizza, any more than a  salad, made with smoked chicken and Parmesan but without anchovies and runny egg and bacon, is a Caesar.

I have spoken.

Lastly place the pizza on the hot stone.

BAKE for ten minutes before removing the paper from under it with a quick tug.

Bake for 5 more  minutes

NOTE  if you have a smoke box and wood-shavings as in the picture, you can give the pizza a smoky wood-fired flavour.  That is probably authentic.  Tastes good.
