Cream of Broccoli and/or Cauliflower Soup

Low-fat vegetarian winter comfort food for the slow cooker.

  • 1 med cauliflower cut into florets  (and/or)
  • 1 good size head of broccoli chopped roughly (include stalk)
  • 1 large onion
  • garlic
  • 1 litre vegetable stock
  • 1 can low fat coconut cream
  • 2 tablespoons sugar
  • 1 teaspoon curry powder
  • mixed herbs
  • bay leaf
  • salt and pepper to taste
  • 1/2 teaspoon sesame oil, 1/2 teasp olive oil
  • dash or two of Worcestershire sauce
  • dash of Angostura Bitters
  • dash of Tabasco
  • sunflower seeds
  1. chop the onion roughly and quickly fry in oil
  2. add to stock pot with all the other ingredients except the coconut cream and sunflower seeds.
  3. cook 6 hours until veges are soft
  4. remove bay leaf and blend with a blender wand
  5. stir in the coconut cream
  6. reheat , sprinkle on some sunflower seeds when serving.
