From an old friend back at Waitakere Hospital.
Orange Almond Cake:
Take 2 oranges – cover with water and simmer for 1 hour.
Remove from the stove and leave 24 hours. Discard the water.
Chop oranges into pieces (removing pips) place in the food processor and pulse until well pulverised.
Add: 6 eggs 2 tbls lemon juice and process 1 minute.
Add: 3 cups ground almonds 1 cup castor sugar 1 tsp baking powder.
Process to mix.
Bake in a large (26cm) tin at 160 degrees Centigrade tin for 50-60 minutes. (Or until a skewer comes out clean).
Cool 10 minutes and remove from tin.
Serve it with whipped cream with a little orange liqueuer (Cointreau · Grand Marnier ) or with French Vanilla Ice cream.
If you do not eat the cake in one day refrigerate it.
